The atmosphere is great and the food is amazing at Piggyback BBQ. My very first job ever was working in a BBQ restaurant in Odessa, TX. I know Texas BBQ. I know brisket. At Piggyback BBQ in Whitefish, Montana, they’ve mastered the art. They smoke all of their meats on location with Flathead cherry wood. They are always thinking outside of the box. A few things on the menu are novel ideas straight from their own creative mind. Like last time I went, I tried a temporary menu item, barilla tacos. Made with mouthwatering brisket and paired with an equally delicious dipping sauce, they were absolutely unforgettable and left me wanting more.
Last night I tried their ribs for the first time, and I immediately fell in love. Tender, smoky, and bursting with flavor, they’re a far cry from the tough, lackluster offerings you might find elsewhere around town. Will has been my excellent server whenever I go in, always attentive and friendly. He and his buddy Reeves (the owner) have been at it since they met in driver’s education at the age of 15 back in Texas, turning their passion into something truly special.

If you opt for the True Grit Sandwich (brisket, pulled pork, sausage, and bacon topped with slaw), be prepared to share the wealth with a friend. It could come close to serving my family of 6, and I have two teenage boys! OK, maybe not quite that big. I also love that their sandwiches are made on Kalispell’s own Ceres Bakery roll. Way to think local!
